Tomato and Cucumber Salad

This isn't your typical Old Country tomato and cucumber salad. Here fresh mint, thyme and lemon zest add rich aromas while yellow pepper, scallions and black olives bring dramatic color and flavor to the party. When garden tomatoes are in season, this salad practically sings.

Ingredients

> 2 cups quartered cherry tomatoes
> 1/4 cup chopped mint, divided
> 2 tsp fresh thyme leaves, divided
> 1/2 tsp sea salt
> Ground black pepper to taste
> 1/2 tsp lemon zest
> 1 tbsp fresh lemon juice
> 2 tbsp extra-virgin olive oil
> 1 1/2 cups chopped cucumber
> 1 cup chopped yellow bell pepper
> 1/4 cup sliced scallions
> 1/2 cup sliced black olives

Steps

Cut up tomatoes and place in medium-sized bowl. Add half of the mint, 1 teaspoon thyme, salt and pepper, and mix well. In a small separate bowl, combine lemon zest, lemon juice, olive oil, remaining mint, remaining thyme, and more fresh ground pepper. Allow dressing to sit for 30 minutes. In a large bowl, combine cucumbers, peppers, scallions and olives, then add tomatoes and mix well. When ready to serve, whisk the dressing until well mixed and gently add to the salad.
