Ingredients

1 lb ground turkey

1/2 cup dried bread crumbs

1/2 cup ketchup

1 large egg

1/2 cup grated carrot
>
1/2 cup grated zucchini
>
1/2 cup grated sweet potato

1 tbsp Dijon mustard
>
2 tsp Worcestershire sauce
>
2 tbsp ketchup

Preheat oven to 350°. In a large bowl, combine ground turkey, bread crumbs, ½ cup ketchup, egg, vegetables and mustard. Mix well. Season with salt and pepper.

Pack mixture in a loaf pan. Combine Worcestershire sauce and remaining ketchup. Brush over meatloaf.

Bake for 45 min., or until internal temperature reaches 165°.
Tips
To make mini meatloaves, bake for 30 min. in 4 jumbo muffin tins.
