At the grocery store, you’re likely to find yellow peaches, prized for their sweet, juicy flavor that’s delicious raw or cooked. During peak peach season, you may also find their lighter-skinned cousin, white peaches, which are even sweeter and less acidic, or donut peaches, which are similar in flavor to yellow peaches, but smaller and flatter in shape.  

Peaches are part of a family of fruit called stone fruit, which references the large center pit. Fruit like nectarines, plums, apricots, and cherries fall into this broader category and can be used interchangeably with peaches in cooking, but may lend a different flavor.  

No matter which variety you choose, look for peaches that are soft, but not mushy, without any bruises or discoloration. A ripe, juicy peach will feel heavy for its size and produce a sweet, fruity aroma, particularly from the stem end. Firm peaches can be stored at room temperature for up to a week until fully ripened. To extend the life of soft, ready-to-eat peaches, store them in the refrigerator for up to three days.
