Air Fryer Chicken Breasts with Veggies

This 15-minute weeknight recipe relies on the ease of an air fryer and a microwave for a nourishing dinner in no time. A compound butter amped up with smoked paprika adds delicious flavor to the chicken, and the vegetable medley is cooked right in the microwave.

Ingredients

> 1 lemon
> 3 tbsp unsalted butter, room temperature
> 1 1/2 tsp smoked paprika
> 4 boneless, skinless chicken breasts (about 6 oz each)
> Cooking spray
> 2 (12 oz) pkgs fresh vegetable medley (broccoli, carrots, and cauliflower)
> 2 tbsp olive oil
> Chopped parsley, to garnish (optional)

Preheat air fryer to 375°F. Into a small bowl, grate 2 tsp zest from the lemon and squeeze 1 tsp juice (reserve remaining lemon for the vegetables). Add the butter and paprika. Season with salt and pepper. Mix until combined.

Pat the chicken dry with paper towels. Coat both sides of chicken evenly with lemon-paprika butter and season with salt and pepper.

Lightly spray air fryer basket with the cooking spray. Place coated chicken in air fryer in a single layer. Cook 10 min., flipping halfway through, until chicken is cooked through and internal temperature reaches 165°F.

Meanwhile, microwave the vegetable medley according to package directions. Add vegetables to a large bowl and toss with the oil, 2 tbsp juice from reserved lemon, salt, and pepper. Serve with chicken drizzled with any juices left in basket. Garnish with the parsley, if desired.
