Ceviche with Cherry Tomatoes

This ceviche features simple and fresh ingredients. Enjoy it on salad, tacos, or with corn chips.

> 2 pints cherry tomatoes
> 1 avocado
> 1  jalapeño
> 1/2 bunch fresh cilantro
> 1/2 cup diced red onion
> 1/2 cup lime juice
> 1 (8 oz) pkg fresh mahi-mahi fillet


Quarter the tomatoes and dice the avocado. Seed the jalapeño and dice finely. Chop the cilantro. Set all prepped produce in a bowl with the lime juice.
Cut the mahi-mahi into bite-size cubes and add to the bowl. Season with salt. Gently stir ingredients until fully combined. Set in the refrigerator, covered, for 15 min. before serving.
