Green Chili Cheeseburger

Inspired by a diner favorite from New Mexico, this recipe tops grilled burgers with two types of mild chili peppers that pair perfectly with ultra-melty American cheese.

Ingredients

> 2 Italian frying peppers
> 1 (4 oz) can chopped green chiles, drained
> 2 tsp canola oil
> 4 hamburger patties (about 1 lb total)
> 4 slices white American cheese slices
> 4 hamburger buns, toasted

Preheat broiler on high. Line a sheet pan with foil. Halve the frying peppers and add to sheet pan. Broil about 2–4 inches from heat source for 10 min., until mostly charred, turning the peppers occasionally. Remove from oven and transfer peppers to a bowl. Cover tightly with plastic wrap.

When broiled peppers are cool enough to handle, use a knife to scrape away skins and remove seeds, discarding both. Roughly chop peppers. Add to a medium bowl along with canned green chilies.

Set grill or grill pan to medium and brush with the canola oil. Season the burger patties with salt and pepper. Grill 3–4 min. per side, until desired doneness. During last minute of cooking, place 1 slice cheese on each burger and cover to melt. Place burgers on bun bottoms. Top with pepper mixture and bun tops. Serve immediately.
