2 zucchini

1 tbsp olive oil

1 tsp Italian herbs

1 (8 oz) pkg feta cheese, sliced

1/2 (0.75 oz) pkg fresh mint

Preheat the oven to 400°F. Slice the zucchini partially without cutting all the way through. Drizzle olive oil over the 2 sliced zucchini and sprinkle ½ tsp Italian herbs evenly between the two.

Bake the zucchini for 15 min. and carefully remove from the oven. Fill the zucchini with sliced feta cheese. Top each with remaining ½ tsp Italian herbs and bake for another 10 min. Top with fresh mint and serve.
