> 3/4 cup chopped Nature's Promise® Organic Medjool Dates
> 1/2 cup rolled oats
> 1/4 cup smooth peanut butter
> 9 tsp strawberry jam
To a small bowl, add the dates and enough hot water to cover. Let sit 5–10 min., until dates are softened, then drain well. Line a baking sheet with parchment. To a food processor, add soaked dates, oats, and peanut butter. Pulse until smooth.
Divide into tablespoon-size balls and place on baking sheet. Working one at a time, flatten each ball into ¼-inch-thick circle. Add ½ tsp jam in the center. Wrap oat mixture around jam and pinch the edges to seal. Roll into a smooth ball. Repeat with remaining balls and jam. Refrigerate 30 min. before serving. Keep in an airtight container in the refrigerator for up to 1 week.
