Rib Eye Steaks with Cranberry Sauce

This may seem like an unusual pairing, but it's delicious! The tart cranberries highlight rib eye's rich meatiness perfectly.

Ingredients

> 1 (12 oz) bag fresh cranberries
> 1 tsp lemon zest
> 1/2 cup sugar
> 1 lb boneless rib eye steak, cut into 4 portions
> 2 tbsp butter
> 3 tbsp extra virgin olive oil

In a saucepan, bring cranberries, ½ cup water, lemon zest and a pinch of salt to a boil. Lower heat and simmer 20 min. Add sugar and simmer for 5 min., or until all the sugar has dissolved and the sauce has thickened.

Meanwhile, season steaks with salt and pepper. Heat butter and oil in a large skillet and cook steaks on high heat for 4 min., flipping half way, or until internal temperature reaches 135°F. Remove steaks from pan and allow to rest, covered loosely with foil, 5 min. Divide among 4 plates and serve with the cranberry sauce.
