These handheld salads are a picnic-friendly way to include some veggies in your meal. Feel free to swap out the ranch for your favorite bottled dressing.

Ingredients

> 1 English cucumber
> 1 pint grape tomatoes
> 1 romaine lettuce heart
> 1 large bell pepper
> 1 (4 oz) pkg thinly sliced italian salami 
> Wooden appetizer picks
> 3/4 cup light ranch dressing

Steps

Slice the cucumber. Halve the grape tomatoes. Quarter the romaine lengthwise, then cut crosswise into 1-inch chunks. Seed the pepper and cut into 1-inch chunks.

Thread cucumber, grape tomato halves, romaine chunks, pepper chunks, and salami onto appetizer picks. Refrigerate up to 1 day. Serve with the ranch dressing.

Tips

If your picks are very thin, thread ingredients onto 2 parallel picks instead of just 1 for extra stability.
