1 cup frozen spinach or kale

1/2 cup nonfat vanilla Greek yogurt

3/4 cup mint chocolate chip ice cream

1 cup fat-free milk or plant-based milk

1/4 tsp peppermint extract

In a blender, combine the spinach, yogurt, ice cream, milk, and peppermint extract. Blend on high 1–2 min., until smooth. Divide between 2 glasses and serve.
