Shamrock Smoothie

Skip the drive-through with this better-for-you minty smoothie. Spinach adds a natural green color and yogurt helps lighten up the ice cream.

> 1 cup frozen spinach or kale
> 1/2 cup nonfat vanilla Greek yogurt
> 3/4 cup mint chocolate chip ice cream
> 1 cup fat-free milk or plant-based milk
> 1/4 tsp peppermint extract


In a blender, combine the spinach, yogurt, ice cream, milk, and peppermint extract. Blend on high 1–2 min., until smooth. Divide between 2 glasses and serve.
